Exercise: Four laps in a pool :(

So I just have to say that I LOVE my new Taylor scale (though I just read the reviews since I was going to post a link, and they are really bad-oops!). I bought it so I wouldn't have to go into the living room every morning and get naked in front of my family, and whomever else was peeking in the windows, to weigh myself on the Wii Fit. Yes, I love getting my stamp every morning, but now that its bright and sunny out in the morning when I weigh myself, and I have neighbors that love to get up early every morning and work on their gardens, lawns, chasing bunnies, I really would rather not share my intimate details with them. And when I weighed myself on both scales this morning, the Taylor said 158.8 three times in different locations in the room-just to test the floor, of course (wow, below LIW!), and the Wii said 159.8. Which would you prefer ;} ? But yes, I have kept the Wii weight up in my tracker above. I really need to test the Taylor scale to see if its consistantly 1 lb less than the Wii before I decide which will be the gold standard. I'll probably just switch to the Taylor no matter what once I start R2.

Re the exercise listed above, I waited to exercise til last night at Masters Swim...went in my swimsuit, coverup and flipflops, and was sorely disappointed when they closed the pool due to lightning. And then I couldn't work out...I didn't even have any underwear, and flip flops dont really work for my feet on the treadmill. When I got home at 9pm, I knew if i tried to do cardio then I would never go to sleep, so I figured I would just watch a little TV and go to bed after a cup of chamomile tea. So exercise is definitely on the agenda today. Probably the treadclimber at the gym if I can make it there during lunch.

Can't believe that Im already 20 days into P3. And while technically I am moving into P4 in two days, I definitely will be sticking close to the P3 tenets until my next P2 starts mid April (three more weeks!)....though I really am sick of steak days. They work well for me, so I'm hestitant to do other types of protein days, but I will need to get over that to make sure I can make this diet sustainable for me until mid June (that will be the end of R2P3 for me). I am looking forward to making some P3/P4 recipes from this site once Im stabilized a little more. Then I need to start working on controlling my candida...fun!

And tomorrow marks the arrival of TOM ( I hope) so I wonder what it will do to my body now that there is no HCG in it? How has it affected you?

So I ate pretty well again yesterday, with the exception at dinnertime. I actually came home from my training ready to go work out, and once I went into the kitchen I realized how hungry I was and ate all my dinner at 4:45pm. See here for my food. I had cashews, which most people say dont have til later on in P3 or even P4, but they didnt seem to affect me, and they were SO good. But they also didnt fill me up like I thought they would. I could have eaten the whole can of them. And more whipped cream and strawberries, I LOVE THEM!

Today, I was happy to see that I am only .3 above my LIW. I might just be starting to get the hang of this. We shall see how tomorrow goes, however, as I added in a little cheese and egg today. I decided to make all the recipes I had been holding out on, and see how they taste. Kinda like a dry run for my later P3 weeks. I made cauliflower breadsticks (yum!) with mozzarella cheese-had 1.5 of them, oopsie rolls that have cream cheese(also yum, and I dont even like eggs)-only took a few bites of that, and had a chicken feta spinach sausage link for lunch (not so yum). I also made some zucchini latkes for my hubby and inlaws as well, since hubby complained there was nothing in the frig for him to eat....but I didnt have any of those, since I dont like how eggy they taste.

My sister in law is in town for FIL's birthday tomorrow, and we are headed out to Houlihan's for dinner. I would much rather not go to a chain since I know they have all sorts of sugar and starches in their food...but since we are bringing the kiddies and Grandpa doesnt want to be embaressed at a nice restaurant, thems the breaks. We will also be going out to lunch tomorrow before hubby's sister leaves...fingers crossed no more steak days this week with all this eating out.

Got my size 28 waist skinny jeans in the mail today. I ordered a pair of Seven jeans on craigslists in a size I knew I will fit into after round two (motivation and reward), and I decided to try them on. Yes, I was able to get them on...though they did get stuck on my butt. From the front, they looked like they fit, and then on the back you could see a big part of my butt crack...that made me laugh so much! It is going to be so great to fit in them come June!

And as promised from yesterday, here are my measurements for today (just from the last week-can you believe Im down another 3 inches off the HCG-I think I measured wrong!)-click to make larger:
And for those of you in P3 that are missing crackers, I just came upon this cracker recipe that sounds pretty yummy.

Recipe: Cheese crackers
1 block shredded or coarsely grated parmesan reggiano, rind removed (or any type of hard cheese)
Seasonings of choice IE Italian herbs, cajun spice, dry hidden valley ranch seasoning, etc etc
1 nonstick skillet
1 large round cookie cutter (optional)
1 small bowl or cup (optional)

1. Heat skillet on medium heat.
2. In small bowl, combine spices/seasonings and parmesan cheese untill optimum flavor is obtained.
3. Place cookie cutter in skillet if you are OCD and require perfectly round parmesan crisps. Sprinkle thin layer of cheese with seasonings into the cookie cutter, or if you're not using it, into a thin pile on the pan's surface.
4. Wait untill cheese melts into a crisp cracker.
5. Remove from pan.
6. Repeat 17 times.

PROTIP: If you want to make some stylish bowls for party hor dourves, immediately after cooking one cracker, take it out and drape it over the top of the small glass or the back of a small bowl to create a crisp little parmesan cup. You can serve all sorts of little goodies in here, like bruschetta, prosciutto and basil for one potential combination.

Do this only if you want to make your own. Otherwise, you can get the Kitchen Table Bakery's All Parmesan Gourmet Cheese Crips, which I have heard are delicious.

Low Carb White Castle Casserole


Ingredients
1 lb ground beef
1 onion, chopped
2 eggs
1/4 to 1/2 cup mayonaise (sugar free)
1/4 cup heavy cream
8 ounces cheddar cheese, shredded
salt and pepper, to taste
dill pickle slices, for topping make sure they are sugar free
mustard, for topping

Brown the hamburger the chopped onion, drain fat and season to taste with salt
and pepper. put meat in a greased 9-10 inch pie plate, or a square pan.

Stir in half the cheese, then top with remaining cheese.

Beat eggs, mayonnaise, cream, salt and pepper together then pour evenly over the meat.

Bake at 350ºF for 30-35 minutes.

Let stand 10 minutes before serving.


Pizza Crust made with Coconut Flour

2 cups mozzarella cheese or monterey jack cheese, shredded
2 large eggs
2 tablespoons flax seed meal
2 tablespoons coconut flour
1/2 teaspoon baking powder

I also added some garlic powder and some parmesan cheese

Preheat oven to 350 degrees F. Cut 2 pieces of parchment paper out for baking sheet if you are making one large crust. For individual pizzas (this will make 4) no need for extra parchment- just flip them over with a spatula after 15 minutes of baking.

Mix cheese, eggs, flax, coconut flour, and baking powder together until a sticky wet dough is formed. Spread with a spatula or with dampened hands to ¼ inch thickness on a baking sheet lined with one piece of parchment paper.

Bake for 30 minutes in preheated oven. Halfway through the baking process, flip crust over by sliding it off the baking sheet with the parchment paper, placing the second piece on the sheet, and turning the crust over unto the new sheet and peeling the old paper off. Return to oven until done baking.

Remove from oven, slide off of parchment paper, and flip over again for cooling.



Once crust is cooled, top with sauce, pre-cooked veggies or meats, and cheese. Set crust with toppings under the broiler on high for a minute or two until cheese is melted and bubbly. Slice and serve.


Low Carb Taco Bake

Crust

4 ounces cream cheese, softened
3 eggs
1/3 cup heavy cream
1/2 teaspoon taco seasoning
8 ounces cheddar cheese, shredded

Topping

1 lb ground beef
3 teaspoons taco seasoning
1/4 cup tomato sauce
4 ounces chopped green chilies
8 ounces cheddar cheese, shredded

Serve with additional toppings like shredded lettuce, jalapenos, guacamole, ripe olives, sour cream or salsa.

Directions

For the crust, beat the cream cheese and eggs until smooth. Add the cream and seasoning. Grease a 9"x13" baking dish; spread the cheese over the bottom. Pour in the egg mixture as evenly as possible. Bake at 375ºF, 25-30 minutes. Let stand 5 minutes before adding the topping.  For the topping, brown the hamburger; drain fat. Stir in the seasoning, tomato sauce and chiles. Spread over the crust. Top with cheese. Reduce oven to 350ºF and bake another 20 minutes or so until hot and bubbly.  Serve with the toppings of your choice.


Baked Custards

Ingredients
3 eggs, beaten
1/2 cup sweetner of your choice, or equivilant, (I used 12 packets of Truvia)
2 cups half and half
1 cup heavy cream
1 teaspoon vanilla
1/2 teaspoon ground nutmeg

Directions

Preheat oven to 300°F. Combine eggs, cream, half and half, sugar substitute and vanilla in a bowl mixing until smooth. Pour into six ramekin dishes or custard cups. Sprinkle with nutmeg. In a large baking dish filled half-way up with water, place custard cups. Bake for 1 hour to 1 hour and 15 min. or until knife comes out clean when inserted into middle of one of the custards. Refrigerate until serving time.


Chocolate Pots De Creme

Ingredients
2 cups heavy cream
5 ounces good-quality unsweetned chocolate
1/2 cup sugar substitute. plus 5 tablespoons, or I used 17 packets of Truvia
4 large egg yolks, at room temperature

Heat the oven to 300°F and arrange a rack in the middle. Bring about 4 cups water to a simmer over medium heat. Arrange 6 (6-ounce) ramekins 1/2 inch apart in a large baking dish; set aside.
Place cream in a small saucepan over medium heat and bring it just to a simmer.
Remove from heat, add chocolate, and stir until completely melted, about 3 minutes; set aside.
Whisk sugar substitute and yolks in a large bowl until thickened and pale in color, about 2 minutes. Slowly whisk in 1/3 of the chocolate mixture, then add remainder while constantly stirring (try not to incorporate any air).

Place a fine mesh strainer over a large measuring cup or a bowl with a spout and pour in the custard base. Remove the strainer and evenly divide the custard base among the ramekins. Tap each ramekin a few times to break any bubbles that appear on the surface. Place the baking dish in the oven and carefully add enough of the simmering water to reach 1 inch up the sides of the ramekins. Cover the dish with aluminum foil and poke several holes in the foil to allow steam to escape. Bake 25 minutes or until the outer 1 inch of each custard is set (the centers will still be slightly jiggly).

Remove the ramekins to a rack and let cool to room temperature, about 1 hour. Serve immediately or cover and refrigerate up to 4 days. If refrigerated, let the pots de crème come to room temperature for 20 minutes before serving.

Pork Rind recipes-P3

Garlic Dill Meatballs
-= Ingredients =-
1 pound ground chicken
1/2 pound ground pork
1 small onion ; finely chopped
1/2 cup ground pork rinds ; (optional)
1 egg
2 garlic cloves ; pressed
2 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
2 tablespoon canola oil
-= Instructions =-

Heat oven to 375 degrees. Combine chicken, pork, onion, pork rinds, egg, garlic, dill, salt and pepper in a bowl and mix well. Divide mixture into 18 (1 1/2-inch) meatballs.
Heat oil in a large ovenproof skillet over medium-high heat until hot very hot. Brown meatballs (in batches, if necessary) on all sides, about 6 minutes.
Transfer skillet to oven; bake 10 minutes or until meatballs are cooked through.
This recipe yields 4 servings.

Pork Roll-Ups


-= Ingredients =-

8 pork cutlets
= (or boneless chops pounded thin)
8 breakfast sausage links
= (Jimmy Dean, Bob Evans, etc.) -check ingredients-will need some with no sugar or starch
1 egg ; beaten with
1/2 cup water
1 cup crushed pork rinds
8 ounces low-carb (no sugar added) tomato sauce
1/8 teaspoon freshly-ground white pepper
3/4 cup shredded cheese
= (Cheddar, Mozzarella, Swiss)
-= Instructions =-

Preheat oven to 325 degrees.
Sauté sausage until lightly browned. Place one sausage link on each pork cutlet and roll up, tucking in ends of pork to make a pouch. Hold together with a toothpick. Dip in egg and roll in crushed pork rinds.
Chill thoroughly –– at least an hour (this keeps them together, so don't skip this step).
Arrange in baking dish, cover with sauce, and sprinkle with cheese. Bake 1 hour at 325 degrees until done. (These can also be wrapped in foil and grilled, turning once.) Remove toothpicks before serving.

This recipe yields 8 servings; 2 grams of carbohydrate per serving.


You Won't Believe It's Not French Toast

-= Ingredients =-
1/2 bag unflavored pork rinds - (3-oz bag)
2 eggs
1/4 cup heavy cream
3 packets Splenda  (I will be using zSweet or an all natural sugar substitute instead of splenda)
1/2 teaspoon cinnamon
1/2 teaspoon egg nog extract ; (optional)

-= Instructions =-

Crumble pork rinds up until they resemble bread crumbs (use your food processor if you like -- or put them in a Ziploc bag -- air removed -- and roll them with a rolling pin). Set aside.

Beat eggs well and then mix with remaining ingredients and beat again. Add crushed pork rinds to the egg/cream mixture and allow to sit for approximately 5 minutes. Mixture will thicken to a "gloppy" phase during this time.

Meanwhile, heat skillet or griddle with butter or oil, and when hot, fry pancake style until golden brown on both sides. Serve with your favorite low-carb maple syrup (DaVinci, Keto, Atkins, Howards, etc, etc.)

If you don't tell someone who eats them, they will never have a CLUE that these little French toast pancakes are made with pork rinds. And everyone loves 'em. Really. Yeah, really. Would I kid you?

Less than 1 carb gram per serving.

Extremely Important Notes: The pork rinds must be a good brand with an extremely bland taste. Baken-ets (Frito-Lay's national brand) and Huffmann's (a local brand) are the best. Rinds that are super crunchy don't work well for this. It's also important that they be very well crushed -- just one step above dust.
Also, remember to let it really get to its "gloppy" phase and don't rush it. Plus, make sure the skillet is hot before you start adding the mix -- with just enough oil to moisten bottom of pan but not enough to fry chicken in.
Lastly, while the egg nog extract is optional, it really adds something. If you don't have any, we suggest you substitute a vanilla, rather than just leaving it out.

Elephant Ear Rinds

Melt some butter, put the rinds into a brown paper bag, drizzle the butter in and shake to coat.  Sprinkle with cinnamon or pumpkin pie spice and Splenda, zSweet, or a tiny bit of Stevia powder and shake again.  Enjoy!

BREAD PUDDING
1 bag plain pork rinds -- (3 oz) lightly crushed
2 eggs
1/2 cup heavy cream
1/2 cup water
1/4 cup splenda or AS
1 tsp vanilla
1 tsp cinnamon
Mix cream, eggs, water, sweetener, vanilla and cinnamon. Butter 1 or 1 1/2 qt. Casserole dish. Put lightly crushed pork rinds in dish and pour liquid over. Preheat oven to 350 and let casserole sit while it preheats so pork rinds can absorb some liquid. Sprinkle with cinnamon. Bake 30-40 min til top lightly browned. Tasts best warm. (Total=13.8 carbs. Serves 2-4 )

CINNAMON SPICE PORK RIND CAKE


Ingredients:

7 egg whites, room temperature
2 cups of pork rind flour***
2 1/4 cups Splenda or 6 tablespoons Sweetbalance (use more or less to  adjust to personal tastes)
1/2 cup cinnamon
1 teaspoon ground nutmeg
1 tablespoon cinnamon extract
1 teaspoon baking powder
1 teaspoon baking soda
1 cup soured, scalded, heavy whipping cream (33-35% milk fat)
3/4 cup boiling water
4 egg yolks
*** One 80 gram bag of pork rinds yields exactly one cup of pork rind flour.
Using a blender or food processor, grind pork rinds into a fine flour or brown sugar-like substance by placing one pork rind at a time in blender or food processor and grinding it.
To sour the cream, add 2 tablespoons vinegar to the heavy whipping cream. To scald cream, bring to a slow boil and remove from heat immediately.

Directions:
Preheat oven to 350 Degrees Farenheit. Lightly grease one 16X16 rectangular cake pan, or two round 8 inch cake pans, or two 8X8 square cake pans. Set aside. In a large bowl, add pork rind flour, sweetener, cinammon, nutmeg cinammon extract, baking powder, and baking soda. Mix until thouroughly blended. Add scaled, soured cream and boiling water. Beat on low speed with an electric mixer, or with a hand whisk, until well blended.
Add egg yolks and beat until smooth.
Beat egg whites with an electric mixer on low speed, or with a hand whisk, until egg whites are thick and frothy. Increase electric mixer to high speed and continue beating egg whites until stiff, white peaks form. Be careful not to overbeat the egg whites, as they will lose begin to lose their volume. Gently fold in 1/4 of the egg whites into the cinammon batter.
Fold in the remaining egg whites, working quickly yet gently to preserve the volume of the egg whites.... Bake for 30-36 min.

Cream Cheese Frosting
8oz.creamcheese
1/4 cup butter
1tbsp vanilla
 1/2 cup splenda

Around 4.5 grams per serving, supposing 9 squares each from two 8x8 pans.

P3 Recipes

Got these from various locales, and want to try them all so I am posting them here...Enjoy!  ps-the comments are not mine (except the Chocolate Bark one).

Chocolate Bark
-cant wait to try this one!!!!!!
You will need :
Defatted cocoa
coconut oil
powder sweet leaf stevia

Melt 1cup coconut oil on low in medium sauce pan
once melted add 1/2 cup of coa coa powder stir until desolved
Line a 8x10 cake pan with frezzer paper or foil
pour melted cocoa powder and coconut oil in lined cake pan
sprinkle evenly w/ 1/4 cup Stevia on top of mixture
Freeze for 15 min before sprinkling with any nut topping and then put back in freezer for 15 more min
Add a 5-6 drops of mint,pepermint or any other flaver of Stevia.

Cauliflower Pizza Crust
1 cup cooked cauliflower, shredded w a cheese grater
1 egg
1 cup mozzarella cheese
1/2 tsp fennel
1 tsp oregano
2 tsp parsley
**pizza or alfredo sauce
toppings (make sure meats are cooked)
mozzarella cheese

preheat oven to 450 degrees Farenheit.
Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler (grill for the Europeans) at high heat just until cheese is melted **.

Additional Tips

Notes:

*I use frozen cauliflower prepared according to package directions. After cooked and slightly cooled, I shred cauliflower with a cheese grater, and then measure for the recipe. (Don't pack down the cup with cauliflower. Just fill it with a spoon or the cup itself.)

** The pizza sauce I use is Great Value Pizza sauce from Wal-Mart. At only 3 net carbs per quarter cup, you get a lot of punch for little carbohydrate pow.

*** You can try re-baking the pizza at 450 once you add toppings if desired, but the crust is not quite as crusty. There is a minimal difference, so see what works best for you.

P3 Strawberry-Yogurt Smoothie
1 cup of semi - frozen sliced strawberries
Juice of 1/2 lime
Stevia drops or powder to taste
1-2 Tbsp spoons of very cold water or crushed ice
1 serving of Dannon Light and Fit (Carb & Sugar Control) Stawberries and Cream Yogurt Dairy Snack
(1-2 TBSP heavy whipping cream may be substitued for Yogurt)
Put ingredients in Magic Bullet or blender and mix


I so want guacamole but this was a better choice still to early in maintenace to rock the boat too much.
2oz of red onion
1 tomato quatered
3 cloves of garlic
15 cilantro leaves
4 dashes of tabasco sauce ( I did not have any jalapenos @ house)
juice of 1/2 lime
1/4 of a Haas Avocado
about 1/2 tsp of salt

Pulse to desired consistancy..This is the key do not leave on a setting!!!
I put this over my grilled chicken tonight..Was so yummy!!!


Detox Tea - Morning Flush
1/2 to 1 cup of very warm water
Juice from 1/2 fresh, large lemon (detox agent for kidneys/colon)
Sprinkle of cinnamon ( helps to stablizes blood sugar)
Sprinkle of caynne (red) pepper(boosts metablism)
Stevia to taste

Stir briskly and drink immediately.
Can be repeated as an evening drink as well using the other half of the lemon.
Lemon works as a diuretic and helps eliminate retained fluids in the body especially if you have eaten salty food.

Now before you dismiss this recipe because you're probably saying "Whatttt?? Pork Rinds??????? It taste so delicious and the crust holds better than the cauliflower pizza crust. My kids like this one WAY better than the cauliflower crust and actually, I do too..


Pork Rind Pizza Crust
1 bag pork rinds, crushed
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
3 eggs, beaten

Add all the ingredients and mix well.
Press into a non-stick sprayed pie plate, bottom and sides.
Bake in preheated oven @350 degrees for about 8-10 minutes.
Add your toppings and then re-bake until cheese and toppings are hot.
The recipe could easily be doubled to fit an actual pizza pan.


TOMATO AND SAUSAGE SOUP
Ingredients:

• 2 slices bacon, diced
• 4 ounces linguica, finely chopped: 4 ounces linguica, sliced 1/4-inch thick
 4 ounces chorizo, finely chopped: 4 ounces chorizo, sliced 1/4-inch thick
• 1 cup chopped red onions
• 2 teaspoons Essence, recipe follows
• 1/8 teaspoon crushed red pepper
 1 tablespoon chopped garlic
• 1 bay leaf
• 4 cups chopped peeled and seeded tomatoes
• 3 cups chicken stock (no sugar added)
• Salt and freshly ground black pepper

Directions:
In a large saucepan or stock pot, fry the bacon over medium-high heat for 2 minutes. Add the chopped and sliced sausages and cook with the bacon until the fat is rendered and all the meat is browned, about 5 minutes. Add the onions, Essence, and crushed red pepper and cook, stirring often, until softened, about 5 minutes. Add the garlic and cook until fragrant, 30 seconds. Add the bay leaf, tomatoes and stock and stir to combine. Bring to a boil, reduce the heat and simmer for 30 minutes. Season, to taste, with salt and freshly ground black pepper. Garnish with cilantro.

Essence (Emeril's Creole Seasoning):

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

PARMESAN CRUSTED CHICKEN
Place a rack on a baking sheet and preheat oven to 400.
Ingredients:

4 skinless boneless chicken breasts. Wash and pat dry.
2 Eggs
Dash heavy cream
1.5 cups almond flour
1 cup parmesan
Garlic powder
Sea salt and black pepper

Directions:
In a shallow bowl add two eggs and a dash of heavy cream. I use cream because I want this mixture to remain thick, so that it sticks well to the breasts.
In another shallow bowl mix almond flour, parmesean cheese, herbes de provence, garlic powder, fresh cracked black pepper and a bit of sea salt.
Take a chicken breast and place in egg mixture, coating both sides. Then place in the almond flour mixture and pack that stuff on there! Place breast on rack. Once all the breasts are on the rack, I pack more of the flour mixture on top and spray lightly with olive oil.
Bake for about 45 minutes!

RANCH DRESSING
Ingredients:
1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Directions: In a large bowl, whisk together ...the mayonnaise, sour cream, chives, parsley, dill, garlic powder, onion powder, salt and pepper. Cover and refrigerate for 30 minutes before serving.

NOTE: Only use Daisy brand sour cream. It is the only one that's only ingredient is cream.


FISH STEW
Ingredients:
• 6 Tbsp olive oil
• 1 cup of chopped onions
• 2 large garlic cloves, chopped
• 2/3 cup fresh parsley, chopped
• 1 cup of fresh chopped tomato (about 1 medium sized tomato)
• 2 tsp of tomato paste.
• 8 oz of clam juice (or shellfish stock)
• 2/3 cup dry white wine
• 1 1/2 lb fish fillets (use halibut, cod, sole, red snapper, sea bass), cut into 2-inch pieces
• Touch of dry oregano, Tabasco, thyme, pepper
• Salt

Method:

1 Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato, tomato paste and cook 2 minutes longer.

2 Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve.

Serves 4.


PARMESAN FRIED CHICKEN
Ingredients:
2 lbs chicken breasts (cut into 6 oz servings, serves 5)
1 cup parmesan cheese (use the real stuff, not the imitation)
1/2 cup almond flour
2 Tbsp Italian Seasoning
1 egg
3 Tbsp olive oil

Directions:
Preheat oven to 350 degrees. Mix all dry ingredients. Make egg wash out of egg and water. Dip chicken breast pieces into egg wash and then into parmesan mixture, set aside. Heat large non-stick pan with olive oil on medium high. Once pan and oil are thoroughly heated place chicken pieces in pan and brown on both sides. After browned, place in a baking dish that you've sprayed with a tiny bit of cooking spray. Bake at 350 degrees for about 20 - 25 minutes, until cooked through.


ALMOND SUNFLOWER CEREAL
Ingredients:
2 T. soaked raw almonds
2 T. soaked raw sunflower seeds
½ cup chopped or sliced fresh fruit
½ cup almond milk
Combine nuts, seeds and fruit in a bowl and serve with almond milk.

ALMOND MILK
Ingredients:
2 ½ cups water
1 ½ cups soaked almonds
3 pitted medjool dates, soaked
½ tsp vanilla extract

Directions:
Blend 1 ½ cups water and the remaining ingredients until smooth. Add remaining cup of water and blend until smooth. Using a strainer pour mixture into bowl, using a spatula to press as much of the milk out of the mixture as possible. Transfer milk to sealed container in refrigerator. Will keep for 5 days. Shake before using as liquid separates.

**To soak almonds, place almonds in mason jar, fill with cool water, put on lid and soak at room temperature for 8-12 hours. You want them soft, but not soggy or they lose their flavor.

Sautéed Shrimp
Ingredients
Serves 4
• 1 1/2 pounds large shrimp, tails on, peeled and deveined
• 2 tablespoons extra-virgin olive oil
• Lemon wedges, for serving

• FOR THE SEASONING
• 4 garlic cloves, minced
• 2 tablespoons chopped fresh flat-leaf parsley
• 2 tablespoons chopped fresh oregano
• Pinch of crushed red-pepper flakes
• 1/2 cup dry white wine
• Coarse salt and freshly ground black pepper

Directions

1. Heat oil in a large skillet over medium heat. Add garlic, and cook until soft but not browned, 1 to 2 minutes. Add shrimp, parsley, oregano, and red-pepper flakes; cook, stirring frequently, until shrimp are bright pink and opaque, about 2 minutes.

2. Raise heat to medium-high, and add wine. Continue cooking until most of the liquid has evaporated. Remove from heat; season with salt and pepper. Serve hot, with lemon wedges on the side

Cilantro-Grilled Shrimp with Sesame Cabbage
Ingredients
Serves 4
• 6 cups (1 head) napa cabbage, shredded
• 2 tablespoons canola oil
• 2 tablespoons fresh lime juice, plus wedges for serving
• 2 tablespoons toasted sesame seeds
• Coarse salt and ground pepper
• 32 medium shrimp (about 1 pound), peeled and deveined
• 1/2 cup Asian Cilantro Sauce

Directions
1. Heat grill to high. In a large bowl, toss cabbage with canola oil, lime juice, and sesame seeds. Season with salt and pepper.
2. Thread shrimp on 8 skewers. Place in a shallow dish; toss with Asian Cilantro Sauce. Season with salt and pepper. Grill until opaque, 2 to 4 minutes per side.
3. Serve the shrimp skewers with sesame cabbage, remaining 1/4 cup cilantro sauce, and lime wedges.

Asian Cilantro Sauce
Ingredients
Makes 1/2 cup
• 2 cups loosely packed fresh cilantro leaves
• 2 tablespoons canola oil
• 2 tablespoons water
• 1 tablespoon soy sauce
• 1 tablespoon rice vinegar
• 1/2 teaspoon sesame oil
• Pinch of crushed red pepper

Directions

1. In blender, puree ingredients until smooth.

Broiled Salmon with Spinach-and-Feta Sauté
Ingredients
• 4 skinless salmon fillets (6 ounces each)
• Coarse salt and ground pepper
• 1 tablespoon olive oil
• 2 bags (5 ounces each) baby spinach
• 1/2 cup feta, crumbled (2 ounces)
• 1/3 cup pine nuts
• 2 teaspoons fresh lemon juice

Directions
1. Heat broiler, with rack set 4 inches from heat. Place salmon on a rimmed baking sheet; season with salt and pepper. Broil until opaque throughout, 5 to 7 minutes.
2. Meanwhile, in a large skillet, heat oil over medium. Add as much spinach as will fit; season with salt and pepper. Cook, tossing spinach and adding more to skillet as space becomes available, until tender, about 2 minutes. Remove from heat; drain

Garlic Dill Meatballs
Ingredients
1 pound ground chicken
1/2 pound ground pork
1 small onion ; finely chopped
1/2 cup ground pork rinds ; (optional)
1 egg
2 garlic cloves ; pressed
2 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
2 tablespoon canola oil
Instructions

Heat oven to 375 degrees. Combine chicken, pork, onion, pork rinds, egg, garlic, dill, salt and pepper in a bowl and mix well. Divide mixture into 18 (1 1/2-inch) meatballs.
Heat oil in a large ovenproof skillet over medium-high heat until hot very hot. Brown meatballs (in batches, if necessary) on all sides, about 6 minutes.
Transfer skillet to oven; bake 10 minutes or until meatballs are cooked through.
This recipe yields 4 servings.

Marinated Veggies
1 1/2 Tablespoon of Braggs Liquid Aminos
1 Tablespoon of Braggs Apple Cider Vinegar
1 Tablespoon of fresh squeezed Lemon Juice
Black Pepper to taste

Whish all ingredients together and pour of vegetables in Ziplock bag...let marinate about 30 minutes to 1 hour in Refrig....
Place Vegetables on George Foreman Grill...pour over excess and grill...
I used on Aspargus for Phase 2 but I am sure it would be very tasty on Zucchini for you phase 3 folks

SWEET N SPICY CHICKEN WRAPS
100 grams of chicken
4 Cabbage leaves whole
1 Small Gala apple cored and chopped
2 TBSP of Braggs Liquid Amino Acids
Water
1 TBSP Tabasco
 Course Ground Mustard
2 gloves of garlic minced
2 TBSP of Organic Beef or Chicken Broth
Pepper to taste
1 tsp Onion Powder
1 tsp Garlic Powder

In one small skillet put 100 grams of chicken in saute pan with 2 TBSP of Braggs Liquid Aminos, Black Pepper, onion powder, and garlic powder cook chicken until done, adding water to deglaze pan and keep chicken moist.

While chicken is cooking take another large pan

( I use a 8" pan with high sides so the cabbage leaves lay open and will not tear) add water bring to a boil....add Cabbage leaves one at a time just to cook until cabbage leaf is tender and plyable. (I also remove the hard veins of larger leafs). As they are done take out set to side.

Once the chicken is completely cooked remove chicken from the pan let cool and cut up...keep the juice from cooking chicken add the minced garlic 1 TBSP of mustard and about 2 TBSP of organic beef or chicken broth ( I had beef opened and used it) bring to boil and cook your apples in this mixture once the apples start cooking down and tender return the chopped chicken to the apples.

Take your large steamed cabbage leafs and spoon in the mixture and roll into wraps... This was so satisfying it was sweet and spicy and very filling...

P3 Thanksgiving Recipes

Found these on one of the facebook HCG groups, and I want to be able to find them quickly, so I'm posting them here.  This is just the first of many recipe groups that I want to try that I will be posting.  Please note that I have not yet tried these recipes, nor do I know if they are good for everyone...Enjoy!

Mock Mashed Potatoes

Ingredients
* 1 medium head cauliflower
* 1 tablespoon cream cheese, softened
* 1/4 cup grated Parmesan
* 1/2 teaspoon minced garlic
* 1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
* 1/8 teaspoon freshly ground black pepper
* 1/2 teaspoon chopped fresh or dry chives, for garnish
* 3 tablespoons unsalted butter
Directions
Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
Garnish with chives, and serve hot with pats of butter.
Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.


Almond Flour Pie Crust

Ingredients:
* 1 and 1/2 cups almond meal or almond flour
* 3 tablespoons melted butter
* Artificial sweetener equal to 3 tablespoons sugar

Preparation:
Heat oven to 350 F. Melt the butter (if the pie pan is microwave safe, melt the butter in it) and mix the ingredients up in the pan and pat into place with your fingertips.  Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it

Piecrust recipe, this one is made with pecan flour. I think it would be best for pecan pie or pumpkin pie.

Ingredients:
* 1 cup pecan pieces (frozen)
* 2 T melted butter
* 2 T sugar equivalent from artificial sweetener of your choice
Preparation:
1. Take pecans out of the freezer and measure them into a food processor (you can use a blender, but be careful not to blend them down too small). Pulse the processor until the largest pieces are as big as lentils or split peas.
2. Add the butter and the sweetener (I prefer ”liquid Splenda”). Blend until it's mixed evenly and then quickly
3. Dump it into a pie pan, and push with your fingers to cover the bottom and sides. It should be the right consistency to mold the crust to the pie pan evenly.


Pumpkin pie recipe
Ingredients:
* 9-inch pie pastry
* 16-ounce can pumpkin
* 12-ounce can evaporated milk
* 3 eggs
* 3/4 cup artificial sweetener
* 1/4 teaspoon salt
* 1 teaspoon ground cinnamon*
* 1/2 teaspoon ground ginger*
* 1/4 teaspoon ground nutmeg*
* 1/8 teaspoon ground cloves*

Preparation:
Preheat oven to 425 degrees F. Beat pumpkin, milk and eggs. Beat in rest of ingredients. Pour into pastry lined pie pan. Bake for 15 minutes. Reduce heat to 350 degrees F. Bake for 40 minutes or until knife inserted near center comes out clean. Cool on wire rack. Serve with sugar free whipped cream.
